As a rule we only trim 50% of the fat from our brisket before a 24 hour salt and smoke brine before slow roasting for 8 hours at low temperatures to seal in the flavor. Trimmed again once done and slow braised before serving in a coffee stout for maximum layers of flavor.
Admittedly these are heavily influenced by the Detroit landmark barbecue joint. No frills and no over smoke just amazing flavor with a North Carolina influenced vinegar based sauce that just enhances the meat. Perfectly tender and moist these are Chef’s favorite.
Whole roasted Pork Shoulder coated in a dry rub of ginger, garlic and Mexican Chihuahua Mountain smoked salt. Then finished in a Korean Gojuchang fermented chili paste with soy sauce and ginger.
